Chicken n Dumplings Make a Cold Night Better

When I was a little girl (ok I've never been little lol smaller and younger) my Grammy and Granddad made Chicken n Dumplings. I loved them! Homemade and warm to the soul! 
I was visiting my grand rents a few weeks ago and I got my hands on the recipe! Woohoo! So I thought why not take the recipe and make it mine! 
Here is the recipe: 
2 cups of biscuit mix (boxed anyone you like) 
Cut in 2/3 cup of shorting 
1 cup of liquid (milk, buttermilk, or water) 
Salt and pepper just a pinch. 
Chop and add fresh tarragon and parsley 
Mix together
**If the mix is sticky as a little flour a tea spoon at a time till not sticky or wet 
**If to dry add a little more liquid 
Set aside and grab some wax paper and flour 
Flour the wax paper and place dough on it
Roll out till thin as thin as you can go
Cut pieces about and inch wide I use a pizza cutter it's easier for me 
In a large pot take about 6-8 cups of chicken stock  and bring to a boil gently add the dumplings to the boiling stock 1 piece at a time occasionally stirring it.
Once all the pieces are added, put fresh ground pepper on the top of the mix and let it cook for about 30 to an hour.   
While that is cooking take some onions carrots and garlic and sauté them in butter. Add chicken I like thighs but use what you want I only had breasts this night due to snow...brown it real good and then take the mixture and add it to the dumplings. 
Cook this for another 15 minutes make sure the chicken is cooked all the way. 
Check for taste and add salt or pepper if needed. Then high five your man cause it's so dang good! 
Plate up w a veggie (I made green beans) and some biscuits. Keep it simple remember it's a make you soul better meal!

A relationship is like a good chili

      On a cold day I love nothing more than a nice bowl of chili. Im sure most of us feel the same. I love getting fresh veggies and a great lean meat and making it myself, letting it cook most of the morning so I have something to warm my belly at night. My chili has lots of layers of flavor to it and changes depending on the products I have available to me at the market.         As I was making chili this week I was thinking about my current single status. And I started laughing...relationships and chili are very similar. Im sure I am not the only person that has thought of this, but I instantly decided this was going to be my next topic! Goodbye to a Friend

I'm There are times in your life where it seems you are at someone's going away party. Friends get new jobs, they marry, or even leave for school. All kinds of reasons for a move. Some friends you throw a party some friends you take to a bar and some its a nice dinner. My friend Laurie is moving out of state for a new job.
