What a Chicken Meatball?!?

I know, don't freak out too much, I still believe a meatball should have MEAT in it. However, I am on a journey of health. So, what does that mean? Well, it means I have to make meatballs and pasta in a healthier way. I decided that my craving for pasta could go no further, so on this edition of Tasty Tuesday, I will give you some tips to a juicy, homemade, yes, CHICKEN meatball. 

First things you will need to do is find ground chicken, this should be in most grocery stores in the meat case if not, you can make the same recipe with ground turkey. 



Let's get started, what you will need to make this dish. 

1.5 lbs of ground chicken
1 stem of basil
1 stem of parsley
salt
pepper
red pepper flakes
1/2 cup parmesan cheese grated 
1 large egg
1 can of crushed or stewed tomatoes 
1/2 cup white wine
1 tsp butter
Olive Oil
Whole wheat or Gluten free pasta (you can also sub veggie pasta)

I add a little zucchini to mine tonight, it's a great way to sneak in some vegetables. 

In a large bowl combine ground chicken, salt, pepper, and red pepper flake. Blend until it is smooth, you can use a spoon or if you want your hands, but please wash them =). Then add the egg and cheese till nice and smooth, do not over mix you want them fluffy and soft. Chop up the basil and parsley take a couple tea spoons of the herb and mix them into the chicken. Then with your hands roll the mix into 1 or 2 inch balls and place on a cookie sheet. 

Heat a 12-inch pan on medium heat with a little oil in the pan. Gently place the chicken balls in the pan and brown them for a couple minutes, turning them occasionally. After cooking them remove from the pan and put to the side to make the sauce. 



In the same pan, add white wine and tomatoes and simmer, you will want to drop the heat after about 2 mins and let the mixture gently simmer for about 15 minutes. Add a little salt and pepper to taste, you may want to add more red pepper as well if you want a spicy sauce. Then add the chicken balls back to the sauce cover and cook for 15 minutes. This is when you can add a little chicken stock if you want a thinner sauce. 
While this is cooking cook your pasta to the requirements on the package, now here is the trick. Drain your pasta before it's almost cooked and finish it in the same pan as the sauce. It will make your pasta dish come together and the pasta will help naturally thicken the sauce. 

Right before you are ready to serve it toss in the remaining herbs and butter. Toss it around in the pan with the heat off. 

Plate it up and enjoy! I serve it with a salad and sometimes bread. In under 40 minutes from beginning to end, you have a yummy, healthy meal for you and the ones you love.

A relationship is like a good chili

      On a cold day I love nothing more than a nice bowl of chili. Im sure most of us feel the same. I love getting fresh veggies and a great lean meat and making it myself, letting it cook most of the morning so I have something to warm my belly at night. My chili has lots of layers of flavor to it and changes depending on the products I have available to me at the market.         As I was making chili this week I was thinking about my current single status. And I started laughing...relationships and chili are very similar. Im sure I am not the only person that has thought of this, but I instantly decided this was going to be my next topic! Best Ribs in Atlanta

Like most people Sunday is for relaxing and a nice dinner. The Viking and I enjoy taking Sunday to cook a good meal, play a few rounds of Uno and watch Game of Thrones.  This Sunday was no different, while shopping at the farmers market I found a nice rack of baby back ribs.
